Non-stick cookware is a game-changer in the kitchen, making everything from delicate omelets to golden pancakes a breeze to cook. However, that slick surface is more fragile than it looks. Without proper care, the coating can peel, scratch, or lose its effectiveness within months.
If you want to protect your investment and keep your food sliding off the pan, follow these essential maintenance tips.
1. Season Your Pan Before the First Use
Just like cast iron, many non-stick pans benefit from a quick “seasoning.” Wash the new pan with warm, soapy water and dry it thoroughly. Rub a teaspoon of vegetable oil over the surface and heat it on medium for 1–2 minutes. Once cool, wipe away the excess oil with a paper towel. This fills the microscopic pores of the coating.
2. Ditch the Metal Utensils
The quickest way to ruin a non-stick coating is by using metal spatulas, forks, or whisks. Even “scratch-resistant” pans can develop micro-tears over time. Stick to silicone, wood, or heat-resistant plastic utensils to keep the surface pristine.
3. Avoid High Heat and “Non-Stick” Sprays
Non-stick pans are designed for low to medium heat. High temperatures can break down the chemical structure of the coating, causing it to release fumes and lose its non-stick properties.
Furthermore, avoid aerosol cooking sprays. These sprays often contain lecithin, which leaves a gummy residue that builds up over time and becomes almost impossible to remove without damaging the pan. Use a small amount of butter or oil instead.
4. Hand Wash Only
Even if the label says “dishwasher safe,” the harsh detergents and high-pressure water in a dishwasher will degrade the coating quickly. Always hand wash with a soft sponge and mild dish soap. Never use steel wool or abrasive scouring pads.
5. Store with Care
Stacking pans is a common kitchen habit, but the bottom of one pan can easily scratch the interior of the one beneath it. Use felt pan protectors, paper towels, or even a soft cloth between pans when nesting them in your cabinet.
